Qunioa Idli

I have seen a lot of friends posting on Quinoa dosa and wanted to try. Then I thought why not make it just like regular idli. Just like Millet Idli, I made these idli’s and we absolutely did not feel the difference. I did make dosa with the remaining batter and turned out super awesome.

  • Peanuts Chutney
  • Celery Chutney
  • Onion Chutney/Vengaya Chutney
  • Ginger Chutney/Allam Pachadi
  • Coconut Chutney
  • Peerkangai Thol Thugayal/Ridge Gourd Skin Peel Chutney

Quinoa_Idli Quinoa_Idli_1 Quinoa_Idli_2

Ingredients:

Quinoa: 1 cup

Idli Rice : 1 cup

Urad dal : 1/2 cup

Salt : as needed

Water : as needed

Method:

  • Soak quinoa, idli rice together overnight.
  • Soak urad dal for 1 hr.
  • Grind urad dal to fine batter, place it in a bowl. Use little water to grind. Do not make it watery.
  • Grind the quinoa and rice together and grind with little water, as it easily leaves a lot of water.
  • Combine all of them together with around 1/2 tablespoon of salt.
  • Mix well and ferment it overnight.
  • Next day without mixing, grease idli plate and pour batter.
  • Steam for 12 to 15 mins.
  • Serve with any chutney or sambar.

After a day’s time, I added a bit more water and mix batter. Use this for Dosa. I forgot to take pics πŸ™‚ will update the next time I prepare this dosa.

Quinoa Laddoo

Happy Deepavali to everyone πŸ™‚ My celebrations would go less if I don’t have any laddoo πŸ˜› So I was wondering which laddoo to prepare. For the usual mothichoor laddo I don’t have the laddle to prepare. So I decided to make something different. Here is Quinoa laddoo…Because of its gluten free nature, I couldn’t bind it at all. Then found the trick from hereΒ and these are the lovely healthy laddoo’s πŸ˜€

Ingredients:

Quinoa : 1 cup

Jaggery : 1/2 cup(can be replaced by sugar)

Ghee : 2 tablespoons

Water : 1 tablespoon

Milk : 1/4 cup (any kind I used whole milk)

Method:

  1. If you have pre washed Quinoa proceed to step 3
  2. If it is non pre washed Quinoa, wash it thoroughly for at least 4 to 5 times. Drain the water. Spread the quinoa seeds over a kitchen cloth and dry it inside home. (no directly sun drying) I left it for a days time.
  3. Next grind quinoa to Suji/Semolina consistency.
  4. Heat ghee in a pan. When it hot enough add the grinded quinoa and roast it in slow flame.
  5. Roast till it turns nice golden brown and the raw smell goes off.
  6. Stir continuously to get uniform roasting.
  7. In another pan heat Β jaggery with water till it dissolves.
  8. Filter out for any impurities and mix with quinoa.
  9. Warm up the milk and with the above.
  10. Form a nice dough.Β As quinoa is gluten free, it does not hold together. So milk helps in binding.
  11. Now form balls with it by applying little ghee in the palms.

Now quinoa laddoo is ready πŸ™‚

Mushroom, Spinach Quinoa

Saturdays lunch at my home is usually Quinoa pulao. I got bored with the usual vegetable quinoa pulao, wanted to try with some thing different. As always quinoa is something that we can experiment. I still have the huge pack of spinach, using this with Quinoa. I love mushrooms, its been long time since I had used them, so adding it along with this gave a soothing effect πŸ™‚ Quite a simple recipe as well.

Mushroom Spinach Quinoa

Ingredients:

Quinoa : 2 cups cooked

Mushroom : 5 to 6 large pieces chopped

Baby Spinach : 2 cups chopped

Red Onion : half of a large chopped

Olive Oil : 1 teaspoon

Cumin Seeds : 1/2 teaspoon

Garam Masala : 1 teaspoon

Turmeric Powder : 1/2 teaspoon

Ginger Garlic Paste : 1 teaspoon

Salt : 1 1/2 teaspoon

Method:

  • Cook the Quinoa. Please go through this wonderful post from Elaine on how to cook Quinoa. This method is too good and is the best way of cooking quinoa. Cook in a large pan and set aside with closed lid.
  • In another pan, heat oil. Add the cumin seeds, when they change color, add the onions.
  • Now add ginger garlic paste, turmeric powder.Β  Let it turn translucent.
  • Add the mushrooms and saute for 3 to 4 mins. Add salt of 1 teaspoon and saute.
  • Next 1 cup of chopped spinach and saute for 3 to 4 mins. Spinach would reduce in quantity.
  • Now add this in the cooked quinoa, add remaining 1/2 teaspoon salt to quinoa and mix well.
  • Next add the remaining 1 cup of baby spinach to the quinoa, mix well and close with lid.
  • Serve it after half an hour πŸ™‚
