Qunioa Idli

I have seen a lot of friends posting on Quinoa dosa and wanted to try. Then I thought why not make it just like regular idli. Just like Millet Idli, I made these idli’s and we absolutely did not feel the difference. I did make dosa with the remaining batter and turned out super awesome.

  • Peanuts Chutney

Quinoa_Idli Quinoa_Idli_1 Quinoa_Idli_2

Ingredients:

Quinoa: 1 cup

Idli Rice : 1 cup

Urad dal : 1/2 cup

Salt : as needed

Water : as needed

Method:

  • Soak quinoa, idli rice together overnight.
  • Soak urad dal for 1 hr.
  • Grind urad dal to fine batter, place it in a bowl. Use little water to grind. Do not make it watery.
  • Grind the quinoa and rice together and grind with little water, as it easily leaves a lot of water.
  • Combine all of them together with around 1/2 tablespoon of salt.
  • Mix well and ferment it overnight.
  • Next day without mixing, grease idli plate and pour batter.
  • Steam for 12 to 15 mins.
  • Serve with any chutney or sambar.

After a day’s time, I added a bit more water and mix batter. Use this for Dosa. I forgot to take pics πŸ™‚ will update the next time I prepare this dosa.

Quinoa Laddoo

Happy Deepavali to everyone πŸ™‚ My celebrations would go less if I don’t have any laddoo πŸ˜› So I was wondering which laddoo to prepare. For the usual mothichoor laddo I don’t have the laddle to prepare. So I decided to make something different. Here is Quinoa laddoo…Because of its gluten free nature, I couldn’t bind it at all. Then found the trick from hereΒ and these are the lovely healthy laddoo’s πŸ˜€

Ingredients:

Quinoa : 1 cup

Jaggery : 1/2 cup(can be replaced by sugar)

Ghee : 2 tablespoons

Water : 1 tablespoon

Milk : 1/4 cup (any kind I used whole milk)

Method:

  1. If you have pre washed Quinoa proceed to step 3
  2. If it is non pre washed Quinoa, wash it thoroughly for at least 4 to 5 times. Drain the water. Spread the quinoa seeds over a kitchen cloth and dry it inside home. (no directly sun drying) I left it for a days time.
  3. Next grind quinoa to Suji/Semolina consistency.
  4. Heat ghee in a pan. When it hot enough add the grinded quinoa and roast it in slow flame.
  5. Roast till it turns nice golden brown and the raw smell goes off.
  6. Stir continuously to get uniform roasting.
  7. In another pan heat Β jaggery with water till it dissolves.
  8. Filter out for any impurities and mix with quinoa.
  9. Warm up the milk and with the above.
  10. Form a nice dough.Β As quinoa is gluten free, it does not hold together. So milk helps in binding.
  11. Now form balls with it by applying little ghee in the palms.

Now quinoa laddoo is ready πŸ™‚

Quinoa Patties (Baked)

Call it Quinoa Patties/Kebabs whatever I loved these πŸ™‚ You can very much have it with burger or as a tea time snack. Perfect for both πŸ™‚ . This is a long pending recipe on my list after Sabudana Vada. Finally today I got time to prepare this. Quite a simple recipe and loved the way it turned out. Also I gave the Indian Spice touch πŸ™‚

Baked_Quinoa_Patties_3

Ingredients:

Quinoa : 1/2 cup (uncooked)

Water : 3/4 cup

Black Eyed Chickpea : 1/3 cup soaked overnight (You can use normal chickpea as well)

Spinach : 1 cup (finely chopped)

Carrot : 1 grated

Onion : 1/2 of a large chopped

Green Bell Pepper : 1/2 of a large chopped

Cilantro leaves : 15 to 20 strands chopped

Ginger Garlic Paste : 1 teaspoon

Oil : 1 teaspoon

Cumin Seeds : 1/2 teaspoon

Fennel Seeds : 1/2 teaspoon

Garam Masala : 1 teaspoon

Turmeric Powder : 1/4 teaspoon

Pepper Ground : 2 teaspoons

Salt : 2 teaspoon

Method:

  • BringΒ Quinoa and water to boil and simmer it for 6 minutes. Switch off, close it with lid for 20 minutes. By this time it would have got cooked completely.
  • Boil black eyed chickpea, in water until it is very soft. Cool down and grind it to a fine paste in a blender. Set aside.
  • Heat oil in a pan, add cumin seeds, fennel seeds when they crackle, add onion and ginger garlic paste, saute till translucent. Next add green bell peppers and saute for 2 minutes. Next add grated carrots and then spinach in every 2 mins time. Then add garam masala, pepper powder, turmeric powder, salt to this and mix well.
  • Now mix the cooked quinoa, mashed up black eyed chickpea, and the above veggie mix and combine well.
  • Meantime preheat oven to 425 F, grease a baking sheet with oil.
  • Oil your palms and make round patties.
  • Bake for 40 mins. After 20 mins, flip sides and bake.
  • If you feel that they don’t stick well together, dust the made patties with chickpea flour and then bake. I didn’t use it but when flipping sides, few of them did get distorted from shape. So better to use flour.

Quinoa_Patty_Batter

If you want it much crispier, change temperature to 450 and bake πŸ™‚

You can pan fry it as well. Just to avoid more oil consumption I baked it.

For the above mentioned quantity I got around 12 patties.

Mushroom, Spinach Quinoa

Saturdays lunch at my home is usually Quinoa pulao. I got bored with the usual vegetable quinoa pulao, wanted to try with some thing different. As always quinoa is something that we can experiment. I still have the huge pack of spinach, using this with Quinoa. I love mushrooms, its been long time since I had used them, so adding it along with this gave a soothing effect πŸ™‚ Quite a simple recipe as well.

Mushroom Spinach Quinoa

Ingredients:

Quinoa : 2 cups cooked

Mushroom : 5 to 6 large pieces chopped

Baby Spinach : 2 cups chopped

Red Onion : half of a large chopped

Olive Oil : 1 teaspoon

Cumin Seeds : 1/2 teaspoon

Garam Masala : 1 teaspoon

Turmeric Powder : 1/2 teaspoon

Ginger Garlic Paste : 1 teaspoon

Salt : 1 1/2 teaspoon

Method:

  • Cook the Quinoa. Please go through this wonderful post from Elaine on how to cook Quinoa. This method is too good and is the best way of cooking quinoa. Cook in a large pan and set aside with closed lid.
  • In another pan, heat oil. Add the cumin seeds, when they change color, add the onions.
  • Now add ginger garlic paste, turmeric powder.Β  Let it turn translucent.
  • Add the mushrooms and saute for 3 to 4 mins. Add salt of 1 teaspoon and saute.
  • Next 1 cup of chopped spinach and saute for 3 to 4 mins. Spinach would reduce in quantity.
  • Now add this in the cooked quinoa, add remaining 1/2 teaspoon salt to quinoa and mix well.
  • Next add the remaining 1 cup of baby spinach to the quinoa, mix well and close with lid.
  • Serve it after half an hour πŸ™‚

Quinoa with Yogurt, Veggies, Tofu

Quinoa has now become a regular food for us. I prepare this at least once a week. My hubby had some team party and I had to prepare lunch just for me. It is a difficult task isn’t it? cooking only for our self ahh, I don’t like this but yet have to… Today I prepared it in a little different way than the usual way I prepare it. I actually don’t know what to call this recipe πŸ˜›

Some health benefits of Quinoa:

  • It is Gluten free.
  • Highly rich in protein.
  • High in Fiber.
  • Rich in Iron, riboflavin, magnesium.

Here is the recipe, let me know what you think friends…

Quinoa_Yogurt_Veggie

Ingredients:

Quinoa : 1 cup( I had mixed red and white, we can use either of them)

Mixed Veggies : 1/4 cup (carrot, peas,beans,corn I used the frozen one)

Tofu : 10 to 12 cubes(firm)

Yogurt: 1/2 cup

Onion: 1/4 of a large

Oil : 2 teaspoons

Cumin Seeds : 1/2 teaspoon

Fennel Seeds : 1/2 teaspoon

Ginger Garlic Paste : 1 teaspoon

Salt : 1 teaspoon

Pepper powder : 1 teaspoon

Method:

  1. Soak Quinao for 1/2 to 1 hr.
  2. Place Tofu cubes in a tissue paper and cover on top also with another tissue paper, so that water in it is absorbed.
  3. Cook Quinoa with 2 cups if water for 1 portion.
  4. Heat 1 teaspoon oil in a pan and saute Tofu until golden color. Keep it aside.Quinoa_recipe
  5. Heat another teaspoon of oil, add cumin, fennel seeds. When they change color add onions and ginger garlic paste. Let it turn translucent.
  6. Add mixed veggies.Cook for 5 to 6 mins.
  7. Add 1/2 teaspoon Salt and pepper. Optionally we can add garam masala powder. Cook for 3 to 4 mins. Stop and cool.Quinoa_recipe_1
  8. Mix quinoa, stir fried veggies, cilantro leaves and yogurt. Add 1/2 teaspoon salt to this mix.

Now it is ready πŸ™‚

Veggie Quinoa

Quinoa has only recently become widely available and well known in many places, but it has quickly become popular with healthy eaters due to its great body benefits. Mostly treated as a grain (although it is actually a seed), quinoa can be used in the place of pasta, wheat or oats for an extremely nutritious meal. Quinoa, like most grains, is high in fibre, making it great for the digestive system, but perhaps its best attribute is that it is one of the few plant sources of high quality protein, containing all eight essential amino acids. On top of this, quinoa is a great source of nutrients including magnesium, manganese, iron, calcium, potassium and several B vitamins.

We also came across Quinoa recently, when we visited an Indian restaurant near our home. We found Quinoa puloa, we didn’t know what it is and when we asked the restaurant manager, he told us about its health benefits. Though we didn’t try it in the restaurant, I was curious about it and searched about it, So I tried it myself. Got a packet of Quinoa from the Ancient Harvest brand, here it goes…..

Ingredients:

Quinoa : 2 cups

Onion : 1/2 cup sliced

Carrot: 1/2 cup

French Beans : 1/2 cup

Corn : 1/2 cup

Green peas : 1/2 cup

Oil : 1 teaspoon

Cumin seeds : 1 teaspoon

Cinnamon Stick : 1 small

Cloves : 3

Star Anise : 1

Bay Leaf : 1

Salt : 1 tablespoon

Black Peppercorns : 1 tablespoon (powdered)

Method:

Wash the quinoa, and soak it in water for 30 mins.

Heat oil in a heavy bottomed pan. Once it is hot, add the cinnamon stick, cloves, star anise, cumin seeds, once they crackle, add the bay leave. After a min, add the sliced onion, let it turn translucent. Next add all the veggies , let them get cooked. Next add Black peppercorn powder. Optionally you can add garam masala powder also. When the veggies are 70% cooked, add 4 cups of water (1:2 ratio of quinoa: water) and add salt.

Drain the water from quinoa and mix it with the veggies. Stir well and close the pan with lid. Cook it in slow mode for 30 mins. There would be an outer ring formed from the quinoa seed, which looks beautiful.Β You can garnish with cut cilantro leaves.
