For the long weekend, we had been on a road trip. Muffins are one best item to pack up during trips. Here is the eggless blueberry muffin which is made with whole wheat flour and applesauce. 1/4 cup of applesauce is equivalent to 1 egg. You can find the home made unsweetened applesauce recipe here
Ingredients:
Whole Wheat Flour : 1 1/2 cup
Baking Powder : 1 teaspoon
Salt : 1/4 teaspoon
Blueberry : 3/4 cup to 1 cup
Unsweetened Applesauce : 1/4 cup
Dark Brown Sugar : 3/4 cup
Butter : 2 tablespoons
Milk : 1/3 cup
Nutmeg Powder : 1/4 teaspoon
Cinnamon Powder : 1/4 teaspoon
Method:
Preheat oven to 400F and grease muffin tray with butter or place liners.
Mix dry ingredients, whole wheat flour, dark brown sugar, nutmeg powder, cinnamon powder, salt all together and sieve it well.
Mix applesauce, butter, milk and blend well.
Mix both dry and wet ingredients together just until combined.
Pour the batter in muffin tray and bake for 25 mins, until the tooth pick comes out clean.
Cool it down and store in an airtight container.
