Peas Pulao is another easy lunchbox menu. Quick to make and tastes great. Mint leaves is the secret ingredient in this pulao, it gives a great flavor.

Ingredients:

Basmathi Rice : 1 cup

Water : 2 cups

Peas : 1/2 cup

Mint Leaves : 15

Salt : to taste

Green Chili : 2 to 3

Onion : 1/4 of a large

Cumin Seeds/Jeera : 1/4 teaspoon

Ginger garlic Paste : 1 tablespoon

Oil : 1 tablespoon

Method:

  • Wash basmathi rice and set aside.
  • Heat oil in a pan, when hot add cumin seeds. Let it crackle.
  • Add onions saute for 2 mins. Now add ginger garlic paste. Make sure to saute well.
  • When onion turns translucent, add mint leaves and saute for 2 mins.
  • Add peas and saute for 2 mins.
  • Now add the washed and drained rice. Saute for 2 mins.
  • Now transfer it to a electric cooker and add water, salt and cook till done.
  • In case of pressure cooker, cook for 3 whistles. Or cook in a pan as well till fluffy.

Easy pessy peas pulao/pilaf is done 🙂 Serve with dal tadka or any raita.

Mint Leaves Rice/ Pudina Pulao

Today its with the mint leaves, be it the taste, the aroma, digestion aid, they are super good. This is just a simple quick rice recipe again. We can do the same way with either mint leaves, cilantro leaves.

Ingredients:(serving for 2)
To grind:
Mint Leaves/ Pudina – fistful
cilantro leaves – few
Red Onion – 1/2 of one large
Green Chili – 2
Ginger – 1 small piece
Garlic – 2 pods
To season
Oil – 2 tbspns
cumin seeds – 1 tbspn
cinnamon stick – 1 small
cloves – 4
Bay Leaf – 1

Basmati rice – 2 cups
salt – 1 1/2 tbspn

Method:
Clean the Mint and cilantro leaves, chop the onions , cut the green chilies, garlic and ginger, grind them all in a mixer well to a paste. Don’t make it too watery. Take measurement of this in cups, lets say we get 1 1/2 cup of this mix.

Clean Basmati rice and keep aside. You can either use pressure cooker or a normal pan to cook this. I used pressure cooker. Pour the oil and once it is hot, throw the cumin seeds, cinnamon sticks, cloves and bay leaves, let it splutter. Now pour the ground mix and let it boil for few mins. Now put the rice and salt in this and mix well.

Now we already had 1 and a half cup of the mix. Usually I use 1:1.5 rice and water for basmati rice. Since we have 2 cups of rice and already have 1.5 cups of the mix, use another 1.5 cups water and close the pressure cooker and leave it for 3 whistles. If you are cooking open in a pan, just ensure, the rice is cooked well. Do not drain any water.

You can use fork to separate the rice. This rice can be served with yogurt onion raitha, or simply yogurt is nice and goes well with it.

Spinach Rice

I was getting bored with the usual way of preparing spinach with dal. Recently met my aunt , she had prepared this spinach rice. It tasted different and nice, So now its my version of spinach rice given below. Its quite simple, fast and easy to prepare,as well healthy 🙂

Ingredients

Spinach : generous bunch(finely chopped)

uncooked Basmathi rice: 2 cups

pepper : 2 table spoons

cumin seeds : 1 table spoon

onion: 1/4 of the large one chopped

peanuts: handful

ginger : small piece

garlic : 2 pods sliced( not chopped)

oil : 2 table spoons

Salt to taste

Method:

Wash and cook the basmathi rice with 1:2 of rice and water ration respectively. Once cooked, use fork and separate the rice. Do not mash.

Heat oil in a bigger pan.  Add cumin seeds, let it splutter. Now add onion, let it heat to become transparent. add the peanuts, garlic, ginger, pepper. Let it get heated for 2 mins, now add the chopped spinach. I used baby spinach. Let the spinach cook for 5 to 6 mins, it leaves out water, go on cooking. Add little bit of salt now and let the spinach get cooked well. Now add the rice and mix well. stir well and let the rice cook for few mins with the spinach, add a pinch of salt, as the rice should absorb some salt. Mix well.

Now our spinach rice is ready to be served 🙂
