Hope you all had a wonderful Diwali. I just made some millet poha ladooΒ , murukku, gulab jamun. On Diwali day, managed to make some Masala Cheeyam as well.

For gulab jamun I used the instant pack. I had some sugar syrup left out . Its was flavorsome as I had added some saffron, cardamom, vanilla extract. Usually everyone adds rose essence, I didn’t have it, so I used vanilla extract. I somehow didn’t want to throw that syrup. Decided to make sweet diamond cuts with it. It came out awesome. A great tea time snack. I have made it with whole wheat flour. Again traditionally it is made with all purpose flour/maida and semolina/sooji.

I have not given any measurement as I didn’t use any. You can play around with the sweetness and the amount of flour. Also I have not used oil while making dough, as the gulab jamun would leave out oil in the syrup.

Ingredients:

Whole Wheat Flour/Aata

Sugar Syrup

Oil : to deep fry

Salt : a pinch

Water : in case needed to make dough

Method:

  • Combine flour, sugar syrup, salt and mix well.
  • Form a dough if needed add some water and make a firm dough.
  • It should not be loose and should be a thick one.
  • Set aside for half an hour.
  • Roll out with rolling pin and cut in to small diamond shaped pieces.
  • While rolling out as we are deep frying, make it medium sized not too thick nor thin.
  • Heat oil for deep frying.
  • When hot, slowly drop pieces in and let it fry. Have the heat in low medium.
  • Once done, remove and drain excess oil in a paper towel.
  • Enjoy with a hot cup of chai or coffee.

Baked Wheat crackers/ Baked Wheat Diamond cuts

I am a big time snack person. Sometimes I feel I am better when compared to my uncles. First thing in the morning after brushing, my uncle’s used to eat snacks like muruku, sedai which is deep fried in oil πŸ˜€ , we grew up that way. Working in IT industry sitting for hours together isn’t good for health with this kind of eating habits. So we all changed slowly. I try to use very little oil when I cook, and I get scoldings from my grandma ( this happens when I cook in her presence ). She as well changed for us :), specially for my grandpa who is a heart attack patient. Now Oil usage has been reduced to a great level at my home.

We have a very common sweet snack diamond cuts, which is made out of all purpose flour and sugar fried in oil. But at my home we used to make it with wheat flour and sugar, fried in oil. Now I want to reduce sugar consumption as well. So I made a salty version of it by baking πŸ™‚

Ingredients:

Whole Wheat flour : 1 cup

Salt : 1 teaspoon

Pepper powder : 1 1/2 teaspoon

Cumin powder : 1 teaspoon

Corriander powder : 1 teaspoon

Carom Seeds/ Thymol Seeds : 1 teaspoon

Olive oil : 1 teaspoon

Method:

Mix all the ingredients in a bowl. Add water slowly and make dough out of it.

Once dough making is done , rest it for 15 to 20 mins.

Next divide the dough to 2 pieces, make a ball out of it.Β Then roll the balls dusting a little wheat flour into round shape with a rolling pin. You can do it the similar way like the Pizza base. It should not be thick or too thin, make it medium.

Cut them in to pieces of any shape you want, I did the diamond shape as it the traditional way which is done πŸ™‚ Pricked some holes using fork in the pieces.

Then place them in baking tray. Preheat oven to 350F. Once done bake it for 20 minutes. If needed flip sides for even baking.

This has just the one teaspoon of oil to hold the dough. No more oil. Its a good tea time snack πŸ™‚
