Baked Avocado, Mung sprout Patties

Sometime back I had posted a salad with Mung sprouts and avocado from then , I have gone crazy with this combination. Yeah You won’t believe I tried to make Indian style Idli (steamed rice cake) with this combo by adding some rice. Tried it as I have heard about Sprouts Idli, but this turned out to be a disaster 😛  I had to throw off the complete batter 😦

I thought of making beet patties, suddenly this flashed in my mind why not use mung sprouts and avocado to make patties. Now I didnt want to use oil 😛 so baked them. Wanted to make it with corn flour but I was out of stock. Other choice was Chickpea flour,but I didn’t want to combine sprouts with this as both might increase gastric issues. I had Sorghum Flour/Jowar Flour which I am using these days instead of whole wheat flour. Sorghum is gluten free, high protein and cholesterol free. I made it as a tea time snack. I try to prepare some snack everyday and my hubby asked what’s today, I said I have baked something without oil. He said OMG you have gone crazy these days not using oil, its not that oil is totally bad 😛 . I guess after I started baking I just love it to a great extent that I feel like baking everything hahaha….I feel so excited to wait and watch how it turns out. After he tasted it, he said hmm this is good and very different. After 2 patties we feel that we are full. Yeah because of sprouts and avocado it makes you feel very full.

Process was quite simple, but for me to decide the ingredients took some time 🙂

I am bringing this to Angie’s Fiesta Friday #21 party. This is such a lovely party where I am finding lots of new friends with great recipes.

Mung_Avocado_Patty_3

Ingredients:

Mung bean sprouts : 3/4 cup

Avocado : 1 medium

Sorghum Flour : 1 cup

Dill leaves : 1 tablespoon heaped

Cilantro leaves : 3 tablespoon finely chopped

Red Onion :1/2 one large finely chopped

Lemon Juice : 1 tablespoon

Ginger : 1 teaspoon grated

Cumin powder : 1 teaspoon

Coriander powder : 1 teaspoon

Salt : as required

Pepper Powder : 2 teaspoons

Roasted Semolina: 1/4 cup just to coat

Method:

First combine Mung sprouts, avocado, ginger, dill leaves in a blender. Grind it to a coarse paste. If needed add little water.

Once done take this in a bowl. Mix salt, cumin powder, coriander powder, pepper powder, chopped cilantro leaves, onion. Mix well. Now slowly add sorghum flour and make a fine batter. Check for salt and spice, if needed more you can add it. If more then mix some more lemon juice.

Make it to any shape which you want, I prefer the usual round. Soak it in roasted semolina and coat the patty. I used Semolina to get the crispiness. You can avoid it as well.

 

Preheat oven to 400F. Grease a baking tray with butter or any spray. Place these patties. Bake them for 30 mins. After first 15 mins, flip side and bake.

I served it with cilantro chutney.

You can skip semolina if you don’t want to use it. Also this can fried with oil in a skillet. Instead of pepper powder, green chili can also be used. You can serve it with tomato ketchup as well.

Mixed Fruit Mousse (Vegan friendly)

My dear friend Lori suggested me to enter into the Fiesta Friday. She is so sweet that she gave me the details and it looks like great fun. I am not gonna wait 🙂 Here is my addition to ‘Fiesta Friday’ Thanks to Angie from NoviceGardener who hosts this party.

I prepared this mousse for my fruits Thursday, it’s already Friday in many places around the world. Here it is still Thursday 🙂 . I am sure by now my blogger friends would know that I love banana and avocado’s. Another fruit of my choice is Pomegranate. All of them are healthy fruits. Recently in my fruits list are raspberry and blueberry. Today I prepared this mixed fruit mousse. I did not want to use Gelatin, as these fruits themselves would give thicker and creamier texture. This can be had as a dessert as well. Let me know your comments 🙂

Ingredients:

Avocado : 1 medium sized

Banana : 1

Pomegranate : 1

Blueberries : 12- 15

Raspberries : 12 – 15

Honey : 1 tablespoon

Dates : 2 pitted

Cashew : 15

Method:

Mixed_Fruit_Mousse

 

Soak cashew in hot water for 15 mins. Remove the seeds from Pomegranate and put them in a blender, without adding any water, make it juice. In a filter, remove seeds and extract the juice.

Remove the seed from avocado. Put it in a blender with banana, dates, cashew, honey, raspberries, blueberries. Use only the pomegranate juice to grind.

Mixed_Fruit_Mousse_Berry

Once done put it in a bowl and refrigerate it for 3 to 4 hours. Then add few pomegranate seeds in top and serve at room temperature.

Mung Sprout Salad with Avocado

Mung/Moong Bean sprout contain beneficial carbohydrates and protein, which supports a healthy lifestyle. These sprouts are low in calories, have fiber and B vitamins, and deliver a boost of vitamins C and K.The fiber in the legumes have the capacity to combine with bile acids.The decrease in bile available for digestion may stimulate the body’s conversion of blood cholesterol into bile resulting in lower levels of blood cholesterol.

But they have some disadvantages as well. If you don’t eat it properly it causes heavy gastric problems.

I have always loved mung bean sprouts. I used to eat them almost everyday few years back as my breakfast. As I had to run to office, I would eat them in a hurry without chewing properly and got this gastric problem. So in between I had stopped it.

Suddenly I had a feeling that I am eating all junk food for the past few days, so I had sprouted the mung bean 🙂 and prepared the salad. I just loved it. Today changed my fruit Thursday routine to Salad Thursday for a change 🙂 here it is…..

Ingredients:

Sprouted Mung bean

Lemon Juice

Yellow onion

Tomato

Black Pepper powder

Salt

Avocado

Cilantro leaves

Method:

I had sprouted the mung beans yesterday, wash it thoroughly. Chop onions, tomatoes, some avocado pieces. Mash them all together. Add lemon juice, pepper, salt and the mung beans.

The creamy avocado gave the salad a great taste.

I haven’t given any measurements, as you can adjust and vary according to your taste 🙂

You can add Dill leaves to it, so that you can reduce the gastric problem.

Finally chew it well and eat 🙂

Avocado Paratha

Avocado a super fruit is a nutritional powerhouse providing numerous potential health benefits. I love the rich creamy texture and taste of this fruit. This is fruit with healthy fats, proteins and dietary fiber. For many days I wanted to prepare this paratha an Indian styled dish, today finally got time to prepare this. These crispy paratha are very tasty, here is how I prepared it..

Ingredients:

Avocado : 1 Medium

Whole wheat Flour : 1 cup

Cilantro leaves : 1 tablespoon finely chopped

Garlic : 2 large finely chopped

Thai Green chili : 1 small finely chopped

Black Peppercorn powder : 1 teaspoon

Cumin Powder : 1 teaspoon

Curry Powder : 1 teaspoon

Lime Juice : 1 tablespoon

Oil : 1 tablespoon ( I used Olive oil)

Butter : little

Salt : 1 tablespoon

Method:

Choose a fully ripe Avocado, remove the pulp and mash it well with a potato masher. Make it to a fine paste. Add green chili, Peppercorn  powder, cumin powder, Curry powder, lime juice, garlic, cilantro leaves, oil, salt and mix well with the mashed avocado. All of them should blend well. No need to add water, as avocado itself would be easy to mix. Now slowly add wheat flour and mix with this paste. Keep adding and mixing. There would be no need of water. Make it to a consistency as normal paratha dough. All the flour will mix well with avocado and stick well.

Next make balls out of this dough. Then roll the balls dusting a little flour into round shape with a rolling pin. You can do it the similar way like the Pizza base. It can be a little heavy.

Heat a griddle and place the rolled out dough on it and cook for a minute.When bubbles start appearing , now flip it over to the other side. Apply butter over in this side. let it cook for a minute. Flip and apply butter this side as well, let it cook for a minute, you can see brownish color dots.

Serve it hot with Yogurt , pickle. Enjoy the healthy paratha 🙂

Avocado Smoothie

South Indians have this tendency and urge to eat food that doesn’t require a lot of chewing, basically a little lazy 😛 I am no exception to it. Rice is the staple food for us and it doesn’t require chewing and easy to eat. There were days when I used to eat just rice with Yogurt mixed without any vegetables.

Actually that took a toll in my health, I got sick ,very fat, without nutrition I was weak. I couldn’t climb stairs. No physical exercise. Every one just made fun of me. I never used to care for my health. It took some time for me to realize it. By that time I had grown really fat.  I was a 5 footer with 155 pounds 😦

But I tried correcting myself by exercising every day. But did not correct my food, a big mistake again. Just exercise will not help. I realized this as well very late. Nevertheless I found it that both physical exercise and proper way of eating is the right way. After this yes I did slim down. I started practicing every Thursday with fruits and milk. Yes at first it was hell. I used crave for food and get exhausted. But slowly I adapted it. Now I am enjoying it. I feel very light after every Thursday when I do this fruits day.

Avocados are a good source of fiber, potassium, and vitamins C, K, folate, and B6. Half an avocado has 160 calories, 15 grams of heart-healthy unsaturated fat, and only 2 grams saturated fat. One globe contains more than one-third the daily value of vitamin C, and more than half the day’s requirements of vitamin K. Check this smoothie that I prepared with avocado.

Ingredients:

Avocado : 1 medium

Milk : 200 ml

Honey : 1 tablespoon

Cinnamon Powder : 1/8 teaspoon

Method:

Cut and slice the avocado, scoop the pulp out, add milk, honey and cinnamon powder and put it in a blender. Blend it to a smoothie, If you need you can add some more milk or water. I prefer honey rather than sugar as honey is much healthier than sugar. Enjoy this healthy smoothie dear friends 🙂
