Looking for a healthy gluten free vegan dessert for your breakfast, oh yeah I said dessert ๐ Don’t worry no refined sugars in here and more over vegan and gluten free, what more is needed for a healthy breakfast. Here is Chia Pudding, and to accentuate the power I added Mango to it ๐ This would be my last Mango recipe of the year I guess ๐ Those who are not gettingย mangoes, you can try the same with Avocado, Banana in this recipe. Otherwise just plain chia pudding as well tastes very good.
I definitely got bored with my usual idli dosa breakfast. And in the morning when my hubby rushes to office sometime he tries to avoid breakfast though I compel him to eat something. This is no cook and just mixing stuff. Refrigerate it the previous night and TADA morning it is readily available ๐
Chia Seeds health benefits
- They are loaded with antioxidants
- Rich in protein
- All carbs they have are fiber (Cool isn’t it)
- High in omega 3 fatty acid
- Reduces Blood pressure
- Make you feel fuller faster (This is what I want ๐ )
- They are easier to digest than Flax seeds.
Ingredients:
Chia Seeds : 3 tablespoons
Dates : 2 large deseed and smashed to pulp
Coconut Milk : 1 1/2 cup
Vanilla extract : 1/4 teaspoon
Mango : one large pulp
Method:
Add chia seeds to coconut milk, chia seeds together and mix well in a bowl.
In another 10 mins, it would startย getting thicker at the bottom. Stir well and add vanilla extract and dates.
Refrigerate overnight.
While serving add the mango pulp with this and mix well.
Mango Chia Pudding is ready ๐

I have t tried out chia seeds yet. How do they taste Malar?

Lori, they are a bit slimy and crunchy. When you leave it with any liquid they bloat up. Even after they bloated up there was a bit of crispiness in it. Do try it Lori, I felt very full after eating half bowl ๐ As well you can use with any milk(almond, soy, coconut, normal milk)

Any dessert with mango am in….and this sound fab Malar… chia seeds makes it but slimy right but that adds taste. .. nice dear and loved addition of dates so sugarfree. ..:)
