I got another big box of mangoes last week, as the season is ending soon and for 10 big mangoes, guess the rate??? It was 3.99$ . Did not want loose this offer 😛 because here it is usually 1$ per mango. Buying it isn’t a big deal, but using it is what a big deal 😛 And each mango yields one full cup of pulp. So I thought let me do a cupcake, as I have tried muffins and never a cup cake.
Wanted to make it totally a vegan but did not have the ingredients for frosting in vegan. So I used the butter frosting and never have I thought I would do this anytime 🙂 I don’t have any electric mixer , proper piping aids, somehow I managed it with hand mixer and ziplock bag 🙂 It was a little hectic to beat the frosting but I felt worth doing it and I enjoyed it 🙂
Recipe adapted from Holycowvegan
Ingredients:
Whole Wheat Flour : 1 3/4 cups
Mango pulp : 2 cups (1 3/4 would also be fine)
Sugar : 3/4 cups
Nutmeg Powder : 1/4 teaspoon
Salt : 1/4 teaspoon
Cinnamon Powder : 1/4 teaspoon
Oil : 6 tablespoon
Baking Powder : 1 teaspoon
Vanilla Extract : 1 teaspoon
For Frosting:
Mango Pulp : 1/4 cup
Confectioners Sugar : 1/4 cup
Butter : 4 tablespoon (at room temperature)
Method:
For Cup cake:
Preheat oven to 375 F and arrange baking tray with liners.
Combine all dry ingredients, wheat flour, sugar, nutmeg powder, salt, cinnamon powder in a medium bowl.
Mix wet ingredients mango pulp, oil, vanilla extract.
Now mix dry and wet ingredients together.
Pour the batter in liners and level it.
Bake for 25 mins or until the tooth pick comes out clean.
Cool it for 20 or more minutes.
For Frosting:
In a medium bowl pace the butter, with mixer in medium speed beat it. Add sugar and beat it.
Now add the mango pulp and keep mixing. It got curdled at the start and keep stirring and one point it combine so beautifully and I felt so happy 🙂
Once it is done, take the piping aid and put it in a plastic bag ( I just used a ziploc bag and cut its end) and squeeze in the frosting.
Now over the cupcakes, what ever shape you want get the frosting done.
Simple cup cake is ready 🙂
For vegan friends, use vegan butter instead of normal butter and do the frosting.
